Summertime equals grilling and trying everything in your power to not use the oven or on even the cooktop. Here are 5 easy things you have to try grilling this summer. You might be questioning it but just try it. I was not disappointed with any of these.
1. Grilled Frozen Pizza
It's Friday night and you're completely sick of cooking. It's a kajillion degrees and you want pizza but do you really want to spend $20 for a pizza or cook the frozen pizza you already have for $5? You don't want to heat the whole house up so light up the grill! I used a round pizza pan, popped it on the grill on low then added the frozen pizza. Cook, checking about every 5 minutes, lifting with a spatula so you can check the bottom to make sure it's not burning. You can spin the pan to cook evenly. Once the toppings are melted and the crust it brown, you can take it off. It took ours about 15-20 minutes. Voila!
2. Grilled Romaine (yes, lettuce!)
You're sure to impress some friends with super easy salad. Light the grill to medium heat. Clean and cut romaine lettuce hearts in half. Brush one side with olive oil. Season with salt and pepper. Flip over to brush and season the other side. Play cut side down on the grill for about 2 minutes (slight grill lines), flip and grill the other side for about 2 minutes. Serve cut side up with with Caesar, bleu cheese or a vinaigrette dressing and sprinkle with shaved Parmesan cheese. Delicious!
3. Grilled Watermelon
Heat the grill to high heat. Cut a watermelon into thick spears or wedges. Make a rub of salt, sugar and lime or lemon zest. Lightly rub both sides of the watermelon. Grill about two minutes on each side. Eat as is or add into a salad.
4. Grilled Nachos
This is perfect for leftover taco beef because you will need cooked burger or cooked chicken cut in strips. Or skip the meat altogether. There are no rules. Heat the grill to medium. Spray a large square of foil with cooking spray or make custom small packets. Layer: tortilla chips, salsa, beef or chicken, beans, jalapenos and a lot of Mexican cheese. Make a nice little foil tent and pop a few holes in the top. Grill until the cheese is completely melted 10-15 minutes. Top with sour cream, cilantro or guacamole.
5. Grilled Strawberry Marshmallow Kebabs
You will need:
Strawberries
Pound-cake (I used lemon but you can use regular)
Marshmallows
melted chocolate for drizzling or whipped topping (optional)
Wash the strawberries. Thread a kebab stick alternating the strawberries and marshmallows. Grill about one minute per side. Top with drizzled chocolate, serve with a side of whipped cream or eat as is!
